The combination of walnuts and chocolate alone is so tasty so one day I had a spare apple and remembered my childhood snack of apples with peanut butter but wanted to jazz it up a bit!
Ingredients
- Apple (of your choice)
- Peanut Butter (or any nut butter)
- Chia Seeds
- Chopped Walnuts
- Dark Chocolate
Instructions
- Use an apple cutter to divide up an apple of your choice.
- Add peanut butter to each slice as the “glue” to add toppings.
- Sprinkle chia seeds, chopped walnuts and dark chocolate to each piece.

Ingredients
- Kale
- Carrot
- Granny Smith Apples
- Strawberries
- Chia Seeds
- Walnuts/ Honey Sliced Almonds (optional)
- Oil of your choice
Instructions
- Finely chop up your kale or rip it apart into small pieces and add to your bowl with oil and massage together so kale is coated. Best to start with less and slowly add more!
- Chop up strawberries and carrots into easy bite size pieces. With the apple I like to use the apple cutter first and then chop up the individual pieces. Add to your bowl of kale and mix together. Just make sure everything is cut into bite sized pieces!
- When it comes to your toppings (nuts, chia seeds,)I suggest to add at the time you are eating for best flavor. If I am bringing to an event I just add it all to the top however for following day would keep a snack size bag filled and top when I was eating it to keep everything fresh and crispy!
- Mix massaged kale with straberries, carrots and apples. Top with chia seeds and nuts. Enjoy!
Notes
- While massaging kale, be sure to really knead it to soften the leaf.
- I suggest adding the toppings when you are ready to eat the salad to make sure everything stays crispy.
- Adding a meat is also a great option. Teriyaki chicken is what I usually do.
